Mama's Sweet Pickle Recipe

  • 5 pounds small, slender cucumbers
  • 1 cup plain salt
  • Water (enough to fill a gallon jug as needed)
  • 1 tablespoon alum
  • Vinegar (5% acidity or apple cider vinegar)
  • 3½ to 4 pounds sugar
  1. Prepare the Cucumbers
    Cut up the cucumbers and place them in a gallon jug.
  2. Salt Soak (4 days)
    Add 1 cup of plain salt to the jug and fill with water. Let sit for 4 days.
  3. Rinse & Alum Soak (4 days)
    Drain the cucumbers and wash them thoroughly. Rinse out the jug, return the cucumbers, add 1 tablespoon of alum, and refill with water. Let sit for another 4 days.
  4. Rinse & Vinegar Soak (5 days)
    Drain and wash the cucumbers well again, and rinse the jug. Return cucumbers to the container and cover with vinegar. Let sit for 5 days.
  5. Final Step (Sugar Cure)
    Drain the cucumbers and vinegar (do not wash). Return cucumbers to the jug and cover them with 3½ to 4 pounds of sugar.
  6. Covering & Storage
    Do not use a metal lid directly. Cover the jug with cheesecloth. Once finished, you may place wax paper under a metal lid if sealing.
